Summertime Peach Pie

peach21-300x208This decadent recipe was submitted by Co-op Member Rosalie Kelley. We’re still seeing lots of peaches at the farmers’ market but we’re betting this pie would work well with any stone fruit.

Old-fashioned Peach Pie

5 Cups of sliced fresh peaches

1 unbaked 9-in pastry shell

1/3 cup butter or margarine, melted

1 cup sugar

1/3 cup all-purpose flour

1 egg large

Place peaches in the pastry shell. Combine remaining ingredients and pour over peaches.  Bake at 350 degrees for 1 hour and 10 minutes.  Allow to cool, however, the pie can be cut if it is still a bit warm.

Hint: Peaches with a creamy to gold undercolor are top-quality fruit.  When cooking, 4 medium peaches equals 2 cups of sliced peaches.

This pie matches well with your favorite vanilla ice cream, especially if the pie is still warm.
